A magnificent Yanagiba Japanese style traditional Damascus sushi / sashimi knife - 270mm in length with the perfect balance and weight!

Designed for cutting sashimi, these knives are used for slicing raw fish by pulling the knife towards you.

If you move the knife on both ways (a sawing motion), the surface will look uneven and dull.

 Care Instructions

  • Always wash the knives by hand to protect the material and maintain long lasting sharpness.
  • Immediately after each use, clean the blade under running water and dry with a soft cloth.
  • Never place the blades in the dishwasher.
  • Use only wooden boards or plastic cutters with medium strength.
  • Keep the knives in a blade protector, in a knife block, on a wall magnetic board.
  • Blades are not suitable for cutting bones (including of fish) or frozen foods.

    Surprisingly good knife

    So right off the bat I will say I had low expectations for this sushi knife but I was pleasantly surprised. For one it's a Chinese made knife and Damascus can be faked fairly easily. That being said Chinese made isn't necessarily a dad thing as long as it's made properly. As a professional sharpener and Japanese knife enthusiast I can say this knife is well made, the grinds are done well and the ura (back side) of the knife has a hollow grind/is concave like it should be. And best of all the knife is real Damascus! The knife is a stamped knife meaning it's not hand forged. The manufacturer will order a large chunk of Damascus steel and punch out the shape of the knife in bulk and then do the grinding and sharpening. The knife comes very sharp out of the box, sharp enough to shave arm hairs. The handle is very comfortable to hold. Overall a great knife and for the price of R1899(price at time of this review) I would definitely recommend it to anyone interested in buying it. Would probably not spend any more than R2000 on it though. For anything above that price you can just get a hand forged Japanese made yanagiba which would be much more worth it at that price range. Lastly a side note; this knife technically isn't a yanagiba, its a sakimaru takohiki, still used for sashimi but it's not a yanagiba
